Test Kitchen Tuesday #3 General Tso's Chicken

I don't know about you, but in our house we LOVE Chinese food. General Tso's is a favorite of mine and for me, the spicier the better. You can adjust the spice level of this to your liking. This does not have the 'thick breading' on it like you get from your favorite takeout place though, but the flavor is amazing.

General Tso's Chicken

2 lbs boneless chicken breasts, cut into bite sized pieces

1-2 TBSP vegetable oil

1-2 garlic cloves, crushed

1/4 tsp ground ginger

3/4 tsp crushed red pepper flakes (if you like spicy go for 2 tsp.

1/3 cup brown sugar (packed)

2 TBSP ketchup

1 TBSP cider vinegar

2 TBSP soy sauce

3/4 cup water

1/2 cup cornstarch (optional)

Directions

1. Heat oil in large skillet. (350 if using an electric skillet, my favorite way to do this)

2. Coat chicken pieces with corn starch (helps make them 'crispy')

3. Cook chicken until golden brown.

4. Remove chicken, pour off excess oil from skillet.

5. Add remaining ingredients, heating over medium heat until well mixed and dissolved.

6. Add chicken to the sauce and bring to a hard boil.

7. Reduce heat and simmer for about 15-20 min until sauce is well thickened.

8. Serve over hot rice and ENJOY.

  1. Sounds yummy - but I'm a wimp, I would probably go to 1/4 tsp of the red pepper flakes!
